What a week! Vlawg tomorrow.
I knew this week would be insane and just like I called out at the start of the month I did not eat as much as I wanted. I made up for it tonight with Thai food AND frozen yogurt though. In the last week I spoke at Ignite Denver, attended LOHAS Forum, spoke on a panel at the Fitness and Health Bloggers Conference, led yoga at the Fitness and Health Bloggers Conference as well as organized, emceed, and spoke at Ignite Fitness.
I’ll go into all of that later but I did not have 100% input into Ignite Fitness because I did not handle the call for speakers and was given a list of 8 where all but 1 backed out so had to scramble my friends to do it. That was a headache and not how an Ignite should be done but with that said I am proud of the sparks that were done. I got a videographer for free so will most likely edit the videos to upload myself versus wrangling her to do that. It can be a little while before the sparks are up (2-4 weeks). I’ll let people know where they are when they do go up.
This past week I attended two 7 a.m. yoga classes at the LOHAS Forum, went to crossfit one time, and led four yoga sessions. I also got three to six hours of sleep every night with some busy days leading up to and for all the events I did. Close to mountain biking time today I had to make a choice of whether to go or not. We were in the 90s, I was sleep deprived, I was calorie deprived, and dehydrated. I opted not to bike because I was setting myself up with a recipe for an accident and/or injury.
This week should be “chill” before Evo Conference next week. I am teaching 5-8 yoga classes. I am thinking I should take tomorrow off to rest from 5+ days of madness besides teaching two yoga classes. I will crossfit 2-3 times and run 2-3 times. On Saturday I am actually gathering some friends for an altitude training trail run ahead of the Warrior Dash in August.
I have been really busy in the last month and am looking forward to everything calming down minus the trip to Utah in 10 days. It is actually sitting here in the quite of 11 PM on a Sunday night that I realize my body is sore. Tomorrow will be a restful day.
This week will be reconnecting with my workout plans and meal plans. I realized last week I am out of frozen beans. I will make a big batch in the slow cooker tomorrow (soaking tonight). This will be a big grain and legume week, veggies, and maybe some lean chicken. And since I have the protein powder I picked up earlier in the month I will also play with some smoothies. I did make sure to pick up a watermelon today vs. a Slurpee I was suddenly craving (funny since I craved them towards the end of my pregnancy over a year ago) so I can freeze and puree watermelon slush. Watermelon is just as yum as coconut water for the warm weather treat.
What have been your favorite warm weather meals and treats?

Very busy woman! But I’m glad you are out there sharing the knowledge with folks (wish I could be in the place!).
My favorite warm weather meals are kabobs and salsas. I’ve been eating those a lot lately and am going to try some new combos.

wow you definitely deserve to take the day off! I look forward to seeing your meals…I am trying to learn more recipes for beans/legumes for myself. I also started making smoothies…I add in a tablespoon of flaxmeal for some protein. For the summer I love frozen berries, or a fruit salad. I haven’t tried watermelon but my stepdaughter wanted me to try a smoothie using the fruit salad we have. Do you freeze the watermelon as chuckes then blend it? I typically freeze my berries when I make the smoothies, so I dont have to add ice. Sorry too many questions.

Tell me more about frozen beans. I want to start using them more, but completely confused when and how to use them – slowcooking and freezing would probably work. Tell me more.

Watermelon is definitely one of my favorite summer treats. I also like to make frozen yogurt pops with my Greek yogurt & a puree of whatever fruits I can find at the local market (peaches this week!).
Glad you are listening to your body and taking some much needed time to rest up a bit before you kick it back into gear. I’m worn out just thinking about all that you have going on!

Summer yum…I’m kind of missing out on it all being stuck inside now, but I do miss living in CA because we did strawberry everything because there was a big field just off the Air Force Base. South Dakota doesn’t do farmer’s markets or anything.

mmmm, watermelon slush sounds dee-licious! I’ve been juicing like crazy and I’m going to start freezing up juices for popsicles. Cantaloupe & honeydew juice are incredible for summer if you like melon, btw. Also, where do you find your legume & grain recipes? I have such a hard time incorporating them but I so seriously need to.

My favorite warm weather foods are: fresh fruit (any and all – preferrably the u-pick kinds) and I love deli sandwiches… perfect for picnics! 🙂
