What an awesome week this is going to be. I will have no reason to not get some running and outdoor time in with decent weather and my husband only in the office 3 days this week. And as far as food – there is so much produce in our home right now. I topped it off with a box of 2nd pears to can from the farmers market yesterday.
The big feast is Thanksgiving. I really do not know why people “pig out” on that day. For us it really is a time to celebrate and that includes a nod to the food we are about to dine on in a respectful manner. We are still settling our menu for the big day but the mantra is – more produce. We have a stockpile of yams, pumpkins, cranberries, greens, carrots, ginger, pears, apples, greens, mushrooms, bok choy, avocado and green beans to play with for the week. Well and some young coconuts too. I plan to make soup and a few things early and let them be leftovers to reheat with our Thanksgiving meal. I am trying to keep it as simple as possible since I may still be volunteering with a race earlier that day.
