Crap week with my schedule. I had a small bout of food poisoning but did get all activity I sought out but one crossfit session. My food has been odd. In the last two days I have had a bagel with hummus, 2 liters of ginger ale (diluted), and 1 cup of diluted apple juice for calories. Not cool. My sugar allergy seems to still be greatly reduced and I think I am past the jubilation of munching on cookies and sweets just because I can. I feel I was back to the normal eating before the food poisoning. The messed up irony is the meal I got sick off of… it was super clean eating and from a high-end salad bar (lean protein, few carbs, lots of veggies, nutrient dense, with a fresh pulped green smoothie to wash it down).
Sunday: Baked Sweet Potatoes w/ Chili
Monday: Burritos (w/ carnitas, beans, cheese, walnuts, veggies, salsa)
Tuesday: Mac n’ Cheese, Broccoli
Wednesday: Chana Saag, Brown Rice
Thursday: Whole Wheat Margarita Pizza
Friday: Tamales con Steamed Veggies
Saturday: Curry of some sort (we may be camping – weather and/or house guests dependent – dutch ovens FTW!!) or Tilapia with some sort of rice/veggie dish in coconut milk
This week’s planned activity:
Sunday (rest), Monday (crossfit), Tuesday (run 3.5 miles), Wednesday (crossfit+yoga), Thursday (run 3.5 miles), Friday (crossfit + yoga), Saturday (run 6.2 miles)
Crossfit is going super well. I am scurred of lack of consistent cardio this winter and spring so far with illnesses between me, family, and friends. I am jazzed to swim tomorrow (I really am like a fish in that environment). I hope the swimming will boost my cardio confidence. Yoga is going well. More dolphin! More dolphin! I am going for some supported scorpion this week in my home practice.
What do you all do for a confidence boost when you feel you need a success?

Ugh lady…I’m sorry that something that SHOULD have been so healthy made you so ill. That sucks!
But good on you for keeping on track and getting back in the saddle so fast.
In my house, for confidence boosts and/or attitude adjustments, we dance around and sing to whatever’s on the radio. 😀

Do you have a healthy recipe you use for Mac N cheese? My girls LOVE mac N cheese, but I hate making the stuff out of the blue box…
I can’t wait to get into the pool this summer… I miss the days when I was a lifeguard and got to swim all the time! 🙂
I definitely cook like jazz with my mac n’ cheese and I do not try to make it “healthy.” This is one of those things in life that is good in true form so I don’t eat much of it. I have no idea how others do it but I use whole wheat pasta, I add in roasted veggies, and I spend a good deal of time on my roux to make it thick and creamy so I don’t have to just dump in a ton of butter. The milk I use is whole + organic (and originally raw) and for the cheeses I play up with the fromagerie in my fridge – I always cut in fresh Parmigiano-Reggiano for taste and I add enough cheese to feel comfy. Some say mine isn’t gooe’d with cheese so I may use less than others. Seriously this is always a combo of soul food and real food jazz when I make it.
